GEEZER MUSHROOM SALAD

 

1 lb fresh mushrooms, sliced

4 sweet pickles, finely diced

2 tbs onion flakes, hydrated

1 garlic clove, minced

1 tomato, finely chopped

1/2 cups olive oil

1/2 cups red wine vinegar

1 tsp sugar

1 head lettuce

 

Combine mushrooms, pickles, onion, garlic clove, and tomato.  Toss.  Add oil, vinegar, and sugar.  Rinse lettuce and tear into bite-sized pieces and divide into bowls.  Divide mushroom mixture into bowls and toss with lettuce.  Serve.
