CHINESE PEPPER STEAK

 

2 lbs round steak, cut into thin strips 2 in long

4 tbs olive oil

2 clove garlic, minced

2 tsp salt

2 cups beef broth

2 green peppers, sliced into thin strips

2 cups celery, thinly sliced

2 onions, thinly sliced

1 can Coca-Cola-

3 tomatoes, cut into 8 wedges each

1/2 can Coca-Cola

4 tbs cornstarch

2 tbs teriyaki sauce

8 servings rice cooked to package directions

 

Heat oil in Dutch oven and brown meat and garlic.  Add beef broth, over and simmer 15 minutes.  Stir in green pepper, celery, onions, and Coke.  Cover and simmer for 5 minutes.  Do not over cook veggies.  Gently stir tomatoes into mixture.  Blend cornstarch into 1/2 cups Coke and teriyaki sauce.  Stir into meat mixture until sauce is thickened.  Serve over hot rice.
